Helen,
I followed the updated version of this tutorial. I liked the idea of using a Color Fill layer; it definitely added more editing flexibility.
Then, . . .
- Added a frame layer style by Jodi to the text. - Ran a Reflection action by Panos. - Added the same frame layer style to the final image.

Sepiana - that's a perfect photo for that font - very beautiful result. That layer style is very nice, too.

The main problem I have, is trying to find suitable fonts. I couldn't see anything like the big bold ones others have used.

I used the "Impact" font for my entry. Another bold font suitable for this kind of effect is "Arial Black".

To add to what Sepiana has already posted you can check for a font that might work by highlighting your text and then highlighting the name of the text in the options bar.....use the up and down keys on your keyboard to scroll through the available fonts.
You can also use the free transform tool (Command/Cntrl T) to adjust the size of your font.

Fun starting image, whippet! If you wanted your letters to stand out some you could add a stroke, shadow, bevel etc. with layer styles.
