Does anyone know how to keep Organizer from adding an edited copy every time you open a file in Photoshop CC or other external editor even if you do nothing to the file?

What version of Elements are you using ?
Maybe you can change this behavior in Edit > "preferences"

Are you sending these files to the other programs via Elements, or are you bypassing Elements and opening them directly into the programs ?
Is it possible that these files are in one of the Organizer's "watched folders" ?

There is an option within the Photoshop Elements editor (I'm not sure about Photoshop CC). When you go to save the file, look at the dialog box that comes up. If "Save in Version Set with Original" is checked, it will save a new version of the file. If that option is not checked, it should overwrite the original file.

As far as I know, there is no way to avoid that Elements creates a copy (with a -edited-1 suffix) when you send a file to an external editor. I just checked this with OnOne and Faststone as external editors. I am not surprised at all, since that choice is the result of the policy of never risking to lose or overwrite an original. That was already the case with the 'OpenInAcr' add-on created by John R Ellis to enable opening jpeg files in the raw editor directly from the organizer. A similar choice is found in the way you can specify Elements Editor as the external editor for Lightroom. The default option in Lightroom creates a copy. The only way I know to skip that copy is to use the 'Elemental' plugin of Daw Matt.
Changing options in th external editor (or in CC) may avoid creating a second copy, but the external editor only receives a copy.
