Have been looking for a tutorial such as that described in Subject line. There are so many tutorials in YouTube and many other places, it makes my head swim. Today is my third or fourth attempt at trying to find a simple tutorial to get me started with Organizer.
The problem is that they all seem to either start at the interface with so much information about the details of what is what (some of which I have no idea what they are talking about) that I give up after about 30 minutes having learned only that "it seems awfully complicated." Or the tutorials start at some mysterious location within the program (today it was meta data) apparently assuming a certain amount of knowledge on the viewer's part.
I know absolutely nothing about organizing. I do know my project consists of 5 major categories (folders) and there are sub-categories (more folders) within each category. The number of photos I am working with is growing exponentially and is already out of hand. It would seem the logical way to corral them is to use Organizer, but not if I cannot understand THEIR WAY of organizing. Maybe I could grasp it because three of my five folders are already titled People, Places, Events.
Has anyone else found an easy to understand tutorial for rank beginners of PSE 14 Organizer? I've looked for someone who might give tutoring lessons, but no luck.
Any help greatly appreciated.

I would suggest you take advantage of the many resources Adobe makes available to users of the Organizer. You could begin with the Organizer Help (PDF).

You could also check our Organizer--Resources sticky thread. Although the list includes information for earlier and more recent versions of Elements, most of it will apply to PSE 14

As a side note -- The last major overhaul of the Organizer occurred in PSE 11. In this version Adobe introduced the new system of People, Places and Events. Now the Organizer is a more automated system of categorizing photos.
As far as a more "structured" learning experience, you could check the online training offered on the site below. Just search for classes on PSE.
