I recently installed PSE 7 to help answer a member's question, and now all the various filetypes are associated with v7.
When I go to Settings, Apps, Default apps and Photo Views PSE2018 doesn't even show up in the list. It is seeming like I should just reinstall, but wanted to ask here first.

Tom, File association is handled by your OS (Windows 10). As a rule of thumb, only the latest installation of a given program will be listed. You installed PSE 7 after you had installed PSE 2018. So, PSE 2018 got bumped out.
Do not uninstall PSE 2018; just run the installer again (over the current installation). This should bring back the lost filetype association.

Before you do that, have you tried right-click-open with-select program?

That would work, but I would have to do it every time. In any case I have run the install and all seems well again.

No you don't. There's a "Remember this setting" or somesuch box you can check.
