I know I can HIDE all layers and view only one with the click of a button but once they are hidden ... how do I turn them ALL back on without having to individually click on all those eyeballs ? thanks

Same way. Just Alt(Cmd)-click on the eyeball. Of course, if you change any of the other layers' visibility before that, then you're stuck with doing it individually.

Yes, it works. It's a "toggle" type switch. Click once for on, once again for off.

I'm a little confused about the Alt(cmd) you describe, Major. I just use the Alt key and left click on the eyeball. The same to toggle back.
It does'nt matter if any layer are turned off. (Elements 12)

I believe this is what Craig meant to say -- "Just Alt(Option)-click on the eyeball". The Option key if you are on a Mac.

Thanks for the clarification. BTW.. on my Mac the key is named "alt" not "opt". I don't know why.
